What Did You Have For Breakfast?




        This is what I made for my hubby and I for breakfast. Healthy and delicious and nutritious. Yummy!




        Here's what I put in it:
        1Tbs Extra Virgin Olive Oil
        1C Organic Baby Carrots diced
        1C Mushrooms sliced
        2 Pinches Kosher Salt
        Fresh Ground Black Pepper to taste
        1/2 Sweet White Onion sliced
        2C   Yellow Squash sliced
        1C Zucchini sliced
        5oz. Hillshire Farms Smoked Turkey Sausage sliced
        1C Grape Tomatoes halved (about 20)
        1C Spinach Leaves Raw

        Add ingredients to nonstick skillet heated to medium heat in the order listed adding a minute or two between each item added to give for even cooking. Do not add salt until mushrooms are browned so they brown and don't give off their juices too soon because the salt will draw the moisture out of them so they don't brown.

        Add two eggs over medium, or how you like them, and you have a great breakfast that is filling, low in calories but gives you the protein and energy you need to get you going in the morning. This would make a great lunch, dinner or side dish as well. There's just nothing like fresh fruits and veggies. I'm not a sweets girl, give me an apple not chocolate. :)
